Well I know that I have not posted anything in awhile. Its been a crazy crazy year so far. Ill get into that later. For now Im on Vacation and am going to post some of the amazing recipes that I am finding from my family. I am in Indiana for a family reunion. This should bring alot of new recipes to try and experience. This recipe is from my Sister-in-law Gail. She is an amazing cook and I made this last night for dinner.
Black Bean and Corn Salsa
1/2 C Green Peppers
1 Small Jalapeno
1/2 tsp Chili Powder
1/2 tsp Garlic Powder
1 can black beans - drained and rinsed
1 med tomato (diced)
1/2 C chopped onion
1/2 tsp pepper
1/2 tsp tobasco or red hot
2 C corn
1/2 C ranch dressing
1/4 C italian dressing
Combine all ingredients and refrigerate for several hours before serving.
** I use lite dressing for both. You can also add some fresh chopped Cilantro
Makes about 1 lb.

Also here are the Chicken Enchiladas that we had for dinner too. So yummy and not covered in fattening cheese! :)
4-5 C chopped chicken
2 C Monterey Jack Cheese (shredded)
1 1/2 C Sour Cream
burrito sized tortillas
-diced onion (optional)
Mix together. Spoon a glob into a center of flour tortilla, fold in sides and roll.
Put a single layer of enchiladas in a 9X13 pan. Pour Gravy over and bake at 350* for 20 mins.
Gravy: 1/2 cup butter (melt in pan)
1/2 cup flour
3 1/2 cup water
3 chicken bullion cubes
1 tsp chili powder
2 tsp cumin
